Sasahime ("Princess of the Night") is a balanced gyokuro that will delight any lover of this tea with its delicious sweetness and a range of flavours with a considerable number of infusions. The delicate umami here is rounded off by slightly grassy notes with a slight sourness. Sasahime doesn't come from a classic single cultivar, but from a masterful combination of three.

Shibori-dashi
50 ml / 6g 55 °C 120 / 5 / 10 / 15 / 25 sec
Ideally suited for preparation in shibori-dashi. Traditionally we use 7g of tea.
1. Infusion:
Pour in water at 55°C (55°F) After two minutes of steeping, drain off every last drop.
2. Pour the infusion with water of the same temperature and pour off immediately.
3. and the next infusion pour gradually warmer water and extend the time of leaching until you are among the immortals.
