Nepal HIMALAYAN SPRING FF 2022 is an excellent representative of mountain teas of the first harvest type.
The Jun Chiyabari tea garden is located in the hills above the town of Hile in Dhankuta district. Divided into five sections, at an altitude of 1700-2100 metres above sea level, it covers an area of 96 hectares. From the very beginning, Jun Chiyabari is a meticulously thought out and planned organic garden project - from the purchase of land in specifically selected locations, to the planting of selected cultivars, to the design of the tea factory, to the employment of the best people in the tea industry.
The cornerstone of Jun Chiyabari's philosophy is respect for tea, people and nature. Their goal is simply to produce the best possible teas while maintaining organic and nature-friendly practices, inspired heavily by Masanobu Fukuoka
Jun Chiyabari in Nepali means "moonlit tea garden" and Jun (純) in Japanese means "pure"

Preparation
Classic:
1) Use 2 grams of tea leaves for every 100ml of water
2) 90 degree Celsius warm water
3) 3 minutes of steeping (4 minutes if you desire a stronger tea)
Cold Brew:
1) Use 10 grams of tea leaves per liter of water
2) Cover with cold water and let macerate for 12-15 hours in the refrigerator
3) Strain into a decanter and serve in chilled champagne glasses
